Pie in the Sky (Or My Belly)

Wassup, all you romance readers?  I’m Julie Ann Walker, author of the Black Knights Inc. romantic suspense series, and I’m ecstatic to be back on the Book Reading Gals, sharing with you my favorite recipe.

But before I get down to the nitty-gritty on ingredients and what-not, let me tell you about my passions.  I have five of them.  First, there’s my husband, my real-life hero.  He’s my rock and my inspiration. <– That’s right.  I said it.  Hubba, hubba.  LOL!   Second, there’s writing.  I mean, seriously, I get to let the voices in my head come out and play without risk if being tossed in the loony bin.   Third, there’s cooking.  Is there anything better than a slow-simmered Coq Au Vin?  I think not!  Unless it’s a juicy Beef Wellington…  Fourth, there’s cycling.  If I couldn’t get out on my bicycle every day, I’d weigh in at a cool metric ton.  (For clarification of this fact, refer back to my third passion.)  And, last but not least, there’s coffee.  Dark, rich, delicious coffee.  It gets me up in the morning and fuels me when I’m on a grueling deadline.

So it’s no wonder, really, that one of my favorite holiday recipes combines my love of cooking with my love of coffee.  And, without further ado, I give you…

Frosty Coffee Pie

Ingredients:

1/4 cup hot fudge ice cream topping, warm

1 chocolate crumb crust (9-inch)

3 cups coffee ice cream, softened (I prefer Haagan-Dazs)

1 package (5.9 oz.) instant chocolate pudding mix

1/2 cup cold coffee

1/4 cup milk

1-3/4 cups whipped topping

1 cup marshmallow creme

1/4 cup miniature semisweet chocolate chips

Instructions:

Spread hot fudge ice cream topping onto crust.  In a large bowl, beat the ice cream, pudding mix, coffee and milk until blended; spoon into crust.

In another bowl, combine the whipped topping and marshmallow creme; spread over top.  Sprinkle with chocolate chips.  Cover and freeze until firm…

Believe me, pumpkin and pecan pies are nice, but if you’re a coffee-lover like I am, this pie is the absolute bomb!  Plus, for family get-togethers, sometimes it’s nice to have an adult option for deserts.
