Today we have Brenda Novak sharing one of her families holiday favorites Popcorn Cake. I do have to admit that after reading this recipe I want to make it right now!
Popcorn Cake
6 quarts popped popcorn
1 lb. marshmallows
1/2 c. butter
1/2 c. oil
2 c. salted peanuts
1 c. M&Ms
1 c. small spiced gumdrops
In a large saucepan, melt butter, add oil and marshmallows and cook over low heat until marshmallows are melted, stirring often. in large bowl or pan, mix other ingredients and add the marshmallow mixture, mixing well. It is helpful to wear well-buttered rubber gloves and mix with your hands. Pack in generously buttered angel food cake pan. Cool in refrigerator. When completely cold, remove from pan and cut in slices. If available, an electric knife works really well.

Pumpkin Bread
4 eggs (beaten)
3 c sugar
2 c pumpkin (1 lb. can)
2/3 c water
3.5 c flour
1.2 t baking powder
2 t. baking soda
1.5 t salt
3 t cloves
3 t nutmeg
3 t cinnamon
Makes 2 large loaves. Beat together. Bake at 325 degrees for 1.25 – 1.5 hours.
This makes a really dense, delicious pumpkin bread.

I don’t bake often but I have baked cupcakes and bread before. I love the smell of freshly baked goods. I’ve never heard of a popcorn cake but it sounds delicious especially thinking of the melted butter.
Great recipes. I will have to try these.
Haven’t head of this recipe, but it sounds tasty.
