Guest Post: Caris Roane, Holiday Recipe and Giveaway

Today we have Caris Roane on talking about her awesome Winter Blog Tour Giveaway and sharing a holiday recipe.

Hi, everyone!  I want to thank THE BOOK READING GALS for having me here today on the ANNUAL HOLIDAY RECIPE & TRADITION EXCHANGE.  In addition to sharing one of my favorite holiday recipes, I’m also sharing about my soon-to-be-released vampire romance novel, GATES OF RAPTURE, as part of my WARM UP YOUR WINTER BLOG TOUR.  As the sixth installment of my Guardians of Ascension series, I’m super excited about introducing you to my most beloved winged vampire warriors, and there will be a few tid-bits following the recipe I’ve included here today.  I also have goodies for you to win, including a Grand Prize Nook with Glowlight, details to follow!

I have wonderful holiday memories, mostly focused on our family’s Christmas Day celebrations – the exchange of gifts, going to the movies to see the December 25th latest blockbuster release, and of course food and more food! 

The recipe I decided to share here today is part of the brunch I prepare for my family before the presents get opened.  We’ve had this as a tradition for a couple of decades now and my family loves it.  The brunch menu is as follows: a tater tot casserole, yogurt fruit salad, homemade pumpkin bread, and crispy bacon.

For today’s Holiday Recipe Exchange, I’m sharing my super-moist, pumpkin bread recipe!

Pumpkin Bread (very moist)

Preparations and baking time:

Preheat oven to 350 degrees

Bake time: 1 hour and 15 minutes approximately

Lightly butter and flour a glass loaf pan (for metal, figure time and heat conversion)

Makes 1 loaf – double the recipe for two…

 

1 ½ Cups flour

2 teaspoons baking powder

1 teaspoon cloves

2 teaspoons cinnamon

¼ teaspoon salt

1 ½ Cups sugar

½ Cup vegetable oil

1 ½ eggs, beaten

8 oz. canned pumpkin

½ Cup raisins, steeped in warm water

½ Cup chopped walnuts

 

In smaller bowl, sift dry ingredients together.  In a separate, larger bowl, blend sugar, oil and eggs.  Alternately, in small batches each time, add pumpkin and dry ingredients, blending thoroughly between.  Fold in nuts and raisins.

Pour batter into the loaf pan.  Bake for allotted time but test toward the end until a thin knife inserted deep into the middle of the loaf comes out clean.  Remove from oven.  Let cool in the pan, on a rack, for 10 minutes.  After 10 minutes, turn the loaf out onto the rack.  Let it cool at least a little bit before diving in!  This is a wonderful, rich, and very moist recipe that my family has loved for years.  Here’s a trick:  The key to raisins in just about any baked goods recipe is steeping them in warm water so that they plump up before putting them in any kind of batter.
