Leigh Morganne’s Shortbread
(a simple recipe for even the youngest minions to master)
Ingredients:
- 4 cups unbleached all-purpose flour
- 3 sticks of softened butter
- ½ cup sugar
- ½ tsp vanilla
Directions:
- Mix butter, sugar, and vanilla until smooth
- Add flour slowly and continue mixing
- Roll dough ¼” thick between two sheets of wax paper
- Using your favorite holiday cookie cutter, cut and place cookies ½” apart on an ungreased cookie sheet
- Bake for about 20 minutes at 350, or until set
- Immediately remove from cookie sheet and cool on a wire rack
- Enjoy as is, or decorate with colored frosting
This is the first recipe that my Scottish grandmother taught me to bake when I was about four. We made them every year she lived after that, and I continue to make them every Christmas. This is just one of the many traditions she passed on to me that I have shared with my children. I am grateful for them all.
