Leigh Morganne’s Shortbread

(a simple recipe for even the youngest minions to master)

 

Ingredients:

  • 4 cups unbleached all-purpose flour
  • 3 sticks of softened butter
  • ½ cup sugar
  • ½ tsp vanilla

Directions:

  • Mix butter, sugar, and vanilla until smooth
  • Add flour slowly and continue mixing
  • Roll dough ¼” thick between two sheets of wax paper
  • Using your favorite holiday cookie cutter, cut and place cookies ½” apart on an ungreased cookie sheet
  • Bake for about 20 minutes at 350, or until set
  • Immediately remove from cookie sheet and cool on a wire rack
  • Enjoy as is, or decorate with colored frosting

This is the first recipe that my Scottish grandmother taught me to bake when I was about four. We made them every year she lived after that, and I continue to make them every Christmas. This is just one of the many traditions she passed on to me that I have shared with my children. I am grateful for them all.
