Holiday Fun with Elizabeth Boyle

Elizabeth joins us today to share her recipe of Russian Tea Cookies and one of her favorite holiday stories…

My grandmother would make tons of these for Christmas every year and they were the first thing I always snagged off the cookie tree she had that was always the centerpiece of the dessert table.

Russian Teacakes
1 cup of butter, softened
1/2 cup of powdered sugar (extra for rolling)
1 tsp vanilla
2 1/4 cups of flour
1/4 tsp salt
3/4 cups of finely chopped nuts (l love pecans, but walnuts are just as good)
Mix butter, sugar and vanilla. Stir in flour and salt. Chill dough.
Heat oven to 400. Roll dough into 1″ balls. Bake 10 to 12 minutes on cookie sheet.
While still warm, roll in powdered sugar. Cool.  Roll a second time in sugar.
Makes 4 dozen.
