Today’s recipe is from Contemporary and Historical Author Brenda Novak
Mint Brownies
2 c. sugar
4 eggs
2 cubes butter (softened)
8 T cocoa
1 T vanilla
1 t. salt
1 3/4 cup flour
Cream sugar, eggs and butter. Sift cocoa, vanilla, salt and flour together and add to wet ingredients. Spread in a greased 9″ x 13″ pan and bake at 350 degrees for 25 – 30 minutes.
Frosting:
3/4 cup butter
2 2/3 cup powdered sugar
2 T evaporated milk (up to 1/4 cup)
1 t mint extract
Green food coloring
Beat together until you reach the desired consistently and spread on cooled brownies. Then drizzle with real chocolate thinned with Crisco (if you want them to look fancy).
My son in law loves anything choc with mint – maybe I will surprise him and make them.
I love brownies. Will try this one.
