Holiday Recipes & Traditions: Holiday Granola from Tara Janzen

Now that Thanksgiving is over we can “officially” kick off this years Holiday Recipes & Traditions. Today we have the amazing Tara Janzen sharing one of her families treats.

Here’s my recipe “Holiday Granola.” I make two kinds, always a double batch, and put it in glass jars to give away to visitors.  The problem, of course, is that it’s a little addicting!

 

Holiday Granola, Tara Janzen

2 1/12 c, oatmeal

1 1/4 c. shredded coconut

1/2 c. each of wheat germ, cracked wheat,chopped almonds, seseme seeds

Stir it all together and add:

1/2 c. vegetable oil

1/2 c honey

Stir the oil and honey in and put into a roasting pan or baking dish – Bake at 350 degrees for 20 minutes, stirring once after the first 10 minutes.  After baking, add dried cranberries, golden raisens, currants, raisens (or any dried fruit, or no fruit at all)

 

Holiday Granola – Gluten-free, Tara Janzen

 

2 1/2 c. gluten-free rolled oats

1 1/4 c. organic coconut flakes

1 1/2 c. gluten-free steel-cut oats

1 c. chopped pecans

Stir it all together and add:

1/2 c. walnut oil OR 1/2 c. coconut oil

1/2 c. maple syrup

Stir the oil and maple syrup in and put into a roasting pan or bakind dish — Bake at 350 degrees for 20 minutes, stirring once after the first 10 minutes.  After baking, add dried cranberries, golden raisens, currants, raisens  (or any dried fruit, or no fruit at all)

Five books I want for Christmas:  Well, no fun here.  I’m in super research mode, and I want a new world atlas, the biggest one I can find 🙂
