Makes Its Own Crust Coconut Pie
1 3/4 cup Sugar
½ cup flour
¼ cup melted butter or margarine
2 cups milk
1 ½ cups coconut
1 tsp. vanilla
With mixer, mix first 4 ingredients, then stir in with spoon next 3 ingredients. Pour into greased 10 inch pie plate and bake at 350 degrees for 40 to 45 minutes or until golden brown. This will be soft in middle which is what you want. If baked too long, it will be more like cake. Done properly you will have a curst on sides and bottom. Solid enough to cut well when cool. The center will be perfect pie consistency.
